SCENARIO, there's a specific map that I love to play or a couple in particular that are chosen too often with the current server map selection system for my tastes. Could you add a way to select what maps you want to play, and the game will only auto-queue you for the servers playing those maps, and auto "server hop" you to a new server playing those maps when the game ends?

Use server browser and filter by map/mode. Adding this to QM would make it a nightmare to even get games going with the current population
Server browser doesn't host a lot of the maps and modes. After the same 5 or so maps and the same 4 modes were always picked, the satisfied players stayed, and the players that weren't left. Leaving the game with a "false positive" response where the remaining players determine the maps and modes. The most chosen maps and modes are only that because the only players left are the ones who want to play them? Maybe enabling some variety can bring more players back to the game without impacting population server density. Because, the TensaTown Domination players will continue to pick that map and mode because it's their favorite.
I understand the frustration with lack of variety, I actively push for it too. However I think the better solution (prepare for a hot take) would be to have variety/x mode only servers for these players, not “generating additional servers with less people overall”
Those who only want conq (actual conq not inf conq garbage) can go play that server, people who want infy (frontline, rush, domi) can play that, etc.
And remove dead/half assed modes like elimination and inf conq, some exciting new mode can take its place as needed but by all accounts these are just inferior copies of already existing gamemodes.
Literally too much conq/inf conq loops cause this problem (same could be said for any 1/2 mode looks taking up browser tbf but it’s mostly conq so that’s the mode being mentioned), but people don’t want to admit that’s one of the reasons why the game is dying even when statistics in the playercount (slowly decreasing) and new player retention (they leave after a few days if they liked the game and wanted to try the other things) show it.
In fact the people complaining about “not enough conq/official conq” are often the same people wanting to “own the sweats and make them leave” in server browser which.. Wow congrats, you did it, the “sweaty new players” who just wanted to try something different in what could be an interesting game for them left and moved on, you surely showed them! 
I'd go for a variety only server, removes the vote option, just pure, "you will get a random map and a random mode after this game, enjoy".
The Steam charts look steady with about 3k avg players since Feb, most probably holding out for the update. Weapon balancing, time-to-kill reworks, sound improvement, and the rest of the overhaul will definitely boost player count for a short period, but more control over map and mode is the key to keeping a higher avg player count after the boom. There's plenty of content and unique experiences, but players want to control their experience in the game, or else get bored and move on.
Other games do it fine tbh
