They fly "drunkenly". You pitch forward, you start pitching too far forward, you pull back to compensate and end up overcompensating. Their pitch/roll isn't responsive enough, feels very "loose" for lack of a better term.

At least with the Littlebird, reducing throttle will practically stop you dead in the air if you're pitched flat or forward.

Throttle response is far too aggressive - it behaves more like a propeller (with reverse) than a rotary wing.

Speed and direction of movement are far too dependent on throttle, and pointing the main rotor in the direction you want it to go - meaning you can reach top speed, but as soon as you level out, you lose all that speed almost immediately. They'd fly better if they carried more momentum. Perhaps more mass and/or less air resistance.

Littlebirds' guns are bound to mouse2 by default - which is also freelook, meaning you can't aim and fire at the same time. I don't recall changing anything relevant in the controls, and at a glance didn't see if there was a separate freelook or weapon binding for vehicles/helis.
All in all they feel pretty awful to fly at the moment, hope to see them improved
