Hiya! If you're updating the modpack with the JAR menu, you wanna use the install new jar on top of existing files as it will keep your world and saves but update the mods and configs. I would recommend backing up the server first, just as a precaution because you can never be too safe (:

if I just backup my files and do the delete files and world itself, would it work if I update it or would the backup file be out of date with the new update?

Backing up is just a precaution incase something messes up during the update. You don't want to use the delete files as that will delete all the current server files, including your world. Some modpacks require a new world to be generated after updating, but not always, so I would still recommend you use the Install new jar on top of existing files when you go to update. lmk if i need to clarify anything (:
