I backuped my mc server but right after i created a new file i clicked on restore to my old progress can someone help me to get it back like 3hrs ago?

Backups only catch the moment in time in which they were made.

you can ask staff on the website if the automatic system potentially made a backup right around that time, but don't get your hopes up

then you might have selected to only backup specific files
