#Can I make my vanilla server modded without starting a new world?

Absolutely! You can use your Vanilla world with mods. To do this, you would need to install your modloader or modpack of choice via our JAR menu. Just make sure when you install, opt to keep your current files. 🙂 We've got lots of guides on adding mods. I'll include a few below.

Also note that any new biomes/blocks added by the mods will only show up in newly explored areas of the map.

do me and my girlfriend need to have the data pack downloaded on our own computers for that to work?
Datapacks belong to the world. So it only has to be on the server.
Mods can be either - optional/unneeded on the client or required on the client.
do i need to do anything for the minecraft version we are using? we are in 1.21.7

You need to make sure the datapack works in 1.21.7.
Also, 1.21.8 is just bug fixes which includes crashing - should probably update.
