It doesn't appear that Paper has an official 1.25.5 build yet.
You could download an experimental build from them and install it manually (make backups)
Or try switching to Spigot who has a 1.25.5 built out. (Still make a backup).

so what is the difference between paper and gyser bc in my panel i thought it said paper allowed bedrock players to join

Spigot and Paper are server loaders.
They allow you to use plugins to modify the server.
Geyser is a plugin that makes the server compatible for Bedrock and Java players.
Geyser must run on Spigot or Paper.
