I unfortunately don't have a good set of Before/After save files, but here's the description anyways.
I had a red toolbox I used specifically for deliver-to-NPC quest items. I went out and delivered all 5x items and was able to return to a gig kiosk for the full payouts... but now that I look in my toolbox I still have 3x of the items.
Not gonna lie, a free purple jumpsuit was a nice surprise, but it very much seems like this is not the intended game mechanics for item delivery quests.

Can you tell us a bit more about the specifics of these gigs?
Were they all different items? Sounds like one was a purple jumpsuit.
And were they delivered to an NPC, or another gig kiosk?
Anything you can do to help us pinpoint which gig/item/etc. had the bug will help. Thanks!

There were 5 gigs, all deliver-to-NPC (two gigs were to the same NPC, for different kinds of items). Items were Signal Box, Signal Box, Replacement Screen, Replacement Screen, Purple Jumpsuit.
I do remember seeing one of the replacement screens drop to the floor during a delivery. And a signal box disappeared at some point but I wasnt paying attention if it was on floor or not.

Because there was interest, I went back to the closest before save and reran the deliveries. So, here are a bunch of saves that seem to reproduce the issue, before/after handing over items.
save_1 is before delivery of an "aftermarket electrical box" to "Thomas Walsh"
save_1b is after clicking "GIG: Deliver Items" dropped a Spare Screen at his feet.
save_2a is before delivery to "Patrick Barber" (both the "cursed purple jumpsuit" and "replacement screen" jobs)
save_2b is after clicking the top "GIG: Deliver Items" dropped a Spare Screen at his feet.
save_2c is after clicking "GIG: Deliver Items" said missing item screen, so I grabbed the one on the ground and tried again and it worked.
save_3a is before delivery to "Jannybliss Flores" for an "aftermarket electrical box".
save_3b is after clicking "GIG: Deliver Items" said missing item screen, so I found a random one on the ground and gave it to her and it worked.
save_4a is before delivery to "Kaitlyn Ijeamaka Tapia" for a "replacement screen"
save_4b is after finding a random one off my boat and handing it to her and it worked.
save_5a is before opening a kiosk to turn in missions.
save_5b is after turning in the missions at the kiosk to five gold tier payouts.
So, the error seemed to be "You get a Screen! You get a screen! Everybody gets a screen!" and it didn't matter if the screen came from random inventory (probably why I didn't notice before as my repair backpack has extras).

On a related note - Almost every hand-delivery I have ever made (as opposed to kiosk-to-kiosk) has resulted in the delivered item promptly being dropped onto the floor by the recipient. It's been this way since I started (mid November) and has persisted across the patches.
