Can confirm that Transform works as ever it has, except maybe funny things with speed ties. I feel like they always go in my favor.

Dark/Ghost comes very close, being weak only to Fairy, and Ghost/Normal is only weak to Dark.
Only Dark pokémon are Meowth and Persian, however. Ghost/Normal gives you a few more options.
Gengar/Porygon looks like the most viable option for Ghost/Normal, with the possible exception of Gengar/Ditto (and not just any ditto).

Clefairy, Jigglypuff, and if you want to get technical, Mr. Mime.
Gengar/Porygon: 62 62 67 144 75 63 (most powerful, pretty fragile. learns recover and... tri-attack, I guess?.)
Gengar/Snorlax: 107 95 63 130 87 57 (much bulkier than porygon or ditto, keeps Gengar's base 130 SpAtk)
Snorlax/Gengar: 153 80 62 98 98 83 (tankiest by far, misses out on a lot of power)
Gengar/Ditto: 60 62 60 128 70 77 (fabulous secret powers if you pick the right ditto)

Not really. When you fused your Pinsir and Kingler, since you selected Kingler first, Kingler became the fusion
Pinsir ceased to exist.
When you unfuse them, it became a Pinsir, and a Kingler was also created.
You basically consumed a Pinsir to turn a Kingler into a Pinsir, with a Kingler as a byproduct
