Go with whichever one you want, this game isn't too hard (unless deliberately set to be so) so whichever option you pick will do decent at worst
Although I personally reccomend Arcanine, he meshes the best with Venusaur in terms of stats and honestly, Grass/Fire is a good type combo

it does retain its ability to change forms while fused

thought be aware that not every form on a fusion has a custom sprite (sensu in particular has more customs than the other 3 since that's the one the game starts you with) and changing forms with oricorio on the body basically changes nothing except appearances. (revalation dance in this case takes whatever the primary type is, even if it's not oricorio's type)

there also isn't limited nectar so feel free to experiment with the forms whenever you want

I have only done one playthrough so I was curious, ignoring design what was the most overpowered fusion people have found? For me it was probably kyoger zekrom with drizzle stab thunders but ignoring legendries then empoleon+garde was good mainly because steel fairy.

A favorite of mine is Amphaleon. Ampharos Empoleon. There’s probably better candidates (something with levitate probably) but electric/steel, had good bulk, and tail glow into flash cannon, surf, and parabolic charge for sustain
