They might know it was a powerful fighting technique that used light energy, and then later on figured it could be used against vampires, but since they hadn't actually fought an original mask-user vampire with hamon that wasn't a zombie underling they wouldn't be prepared.
I'm pretty sure hamon existed just as a magical fighting technique before Will Zeppeli decided to use it to fight the against the mask

I choose DIO, from Stardust Crusaders.
He might seem like a weird choice, but hear me out, DIO's stand is actually a super similar type to DIO's stand. How, you ask? Well, DIO's stand, 「Za Warudo」, is similar to Jotaro's stand, 「Suta Purachina」, which is why 「Suta Purachina」 can stop time. But, in Stardust Crusaders, we can see 「Suta Purachina」 is actually very similar to DIO's stand, which means we can assume that he also has time stopping powers.
What better way to help someone in fighting a time stopping vampire with two people who can stop time?

I just realized, Jotaro survived because, in a timestop, gravity is severely weakened
So he only had to punch against the force of DIO punching the roadroller down, without the influence of gravity.
If DIO unstopped time during that, Jotaro would have to punch against the Roadroller falling AND DIO punching it downwards
And DIO would have some stand energy left to move in stopped time because he cut his own time stop short.
it's very clear the objects dio touches have their normal force to an extent, otherwise the knives he throws wouldn't get near his targets, just stay where he stopped throwing them

The way Polnareff tricked Vanilla Ice into walking near the sunlight, and then having his stand shoulder check him so he falls and disintegrates into dust 
I rewatched Part 3 recently after watching the Part 3 OVA for the first time, and it was like watching it for the first time I was like oh hell yessss
Polnareff is the goofball but he is also really bad ass for what it's worth
And he inspired Guile from Street Fighter! But yeah I gotta say I don't like the anime's pace but the group dynamic is one of the best in the series.

Yeah the only thing Terence has over D'arby is that he's really creepy and "gentlemanly", and he gambles with video games. His personality makes me hate him but he's at least something different than a few of the previous minor antagonists. He is still ultimately boring though. Especially because his stand is like the same as his brother's.
