Okay, so:

I'm playing Duelist and I think I've found myself in some decently favorable circumstances that'll get me further in the game than I'm used to. I'd like some input on which subclass to choose and general tips on how to handle this run.

My setup: I have a sai with the Grim enchantment, a +2 leather armor with the Viscosity glyph, that +5 Chalice of Blood, +4 Horn of Plenty I just found on this floor, and a +2 Ring of Force.

I've found 7/15 Scrolls of Upgrade and have already put 2 into the Ring of Force and 2 into an Elastic greatsword, and have fed one meat pie to the horn, though I'm not sure if the greatsword upgrades and horn were a a great idea. I think my logic with the greatsword was that I wanted to make sure I had a weapon that could deal high raw damage that I could use of the ability of because I haven't really been able to take advantage of the sai's ability, since I'm one-shotting weaker enemies and can't really get in "multiple hits" to use the sai ability with. That part makes me wonder if I should go with Champion so I can instantly swap weapons with no cooldown. And with the horn, I guess I'm just hoping I'll get a chance to transmute it? But I feel like I might want to transmute the sai instead, maybe. Unsure.

I'm not really playing to win this time because I can feel my skill level just isn't there yet, but that's why I'm here. What can I do to minimize screwing up getting as far as I can with what I have now?

Oh, right. That scale armor also has a Viscosity glyph and I was thinking of switching to it, but I don't think it's upgraded at all since my speed seems to be penalized at me having 15 strength right now.

I haven't found the troll blacksmith yet, which is something to consider too.

if you invested in greatsword already just go champion

also sai is great, next time youre using sai make sure you stack up combo from throwies if the enemy is far

You're at floor 12 without a sub class!? You gotta get on that!
You've really got lots of tools to choose from so it depends on your play preference.

Personally, I'd go monk here, although the fact that you're upgrading the great sword indicates you intend to go champion. You gotta choose your subclass, though! Don't go wandering around without it in the mines, waiting for something to present itself to you.

I'd go Monk and put most remaining upgrade scrolls into Wand of Lightning. You can enter Ring of Force stance with Gloves equipped and benefit from the big energy bonus from Gloves and leather armor.

For me, my desired build would look like this:
+0 Brawler Gloves
+2 Leather armor
+2 Ring of Haste (upgrade it twice at the troll Blacksmith)
+2 Ring of Force
+7ish Wand of Lightning.
