No. You zip everything in your server directory or the directory it self then you save it outside of your server folder. Than you replace the file and start the server. If there is no issue, you good. If there is, you still have your backup.

If you're running geyser for bedrock compatibility and you want players to have a lot of auto redstone farms I think you're going to need a very powerful server. And a lot of tweaking.
And some compromises.
Minecraft just isn't build for a bunch of people with insane redstone running at once.

It's kinda hard to say a hard and fast "yes" or "no" for will it lag. It depends a lot on the server setup, the players, the stuff they're doing, etc.
It's a moving targt.
If you aren't lagging at all now, get something similar with a bit more overhead.
If you start to outgrow it you can migrate to a bigger box.

You usually need decent hardware to run ~15 players abusing redstone. So getting anything less than what you're paying now probably isn't realistic.
How much more you need will depend on the players and growth. Tweaking the configs to keep entities sane will be a big help.
