Ok so I actually have a good idea why it's taking so long:
Since the game is going to be bigger, each map they make is going to be huge. Due to that, they have to inspect bugs since TC has not only enough money to check for bugs, but also having huge expectations that silksong should be just as good or maybe even better than hollow knight.

Whenever I hear someome say that TC is adding extra stuff and the game is almost complete, I assume that what TC is doing right now is bug testing and adding extra stuff on top of it.
With that said, that means the game is so fucking huge and full of content that it's taking so much time to just test each one and debugging the game.
