If by example, the map I want to download is 1.14.4, can I use it on the actual version of the game ?

you can try incrementally increase the game version

and re-save the map with each iteration

It's actually better to open in the latest version directly as there have been som bugs in the upgrade path that were fixed in later versions

The main issue is that if it's a map with command blocks or other custom content it won't work as the syntax has changed
