They're still mostly gimmicky problems in my opinion, while exercises you might see in a higher proof-based math books often lead to a new core idea/concept or to reinforce the definitions or giving an example of how to apply a diverse theorem.

Good morning folks. A beginner to mathematics here, I share a common parable, didn't do maths in high school and eventually quit it completely to pursue software development, but recently re-discovered how important math is to really understand the algorithms and be able to even share the same table with smarter folks.
So I've developed a "curriculum" for myself -- I'll dedicate 1-2 hours daily outside of my main work to studying maths from the ground up.
- Re-learn and develop the mathematical base from the ground up
- Khan Academey beginner courses (from 8th standard I am planning)
- Eynt Ace Math In One Big Fat Notebook (https://www.amazon.in/Everything-You-Need-Math-Notebook/dp/0761160965)
- Practice my weakest and possibily the most important parts of maths for me -- Linear Algebra
- I'll find out a good workbook with solved questions and work my way through that
After this point it is really ambiguous on how I should proceed, since my goal with maths is to understand the papers and algorithms deeper, and be able to rationally make sense of them (eg what does the quadratic formula REALLY mean?)
I appreciate ANY advice from y'all, it really helps to get some input for folks smarter and further along this journey than myself.

Right, so the baseline here is hard ass work -- practicing and working with a lot of problems
I guess a first barrier is in understanding the symbols of the language and then internalizing their meaning yes
when I've taught e.g. uni freshmen or HS kids I try to be as verbose as possible, so for instance you could read the formulae out loud
So for now, the next 6 months or so, I will just focus on high shcool maths and working my way through the pre-calculus textbook (Eynt Ace Math In One Big Fat Notebk)
but in the case of stuff like quadratic functions the "meaning" isn't just in the words, but in geometrical properties of these functions
Wow yeah, what you do is really helpful because often when I encounter equations, even simple ones in CS textbooks, I try to write them out in english, to see what they really mean (or sometimes as code)
So I was watching a video by veritasium and it is described how geomtery and maths are harmonious in the way they represent each other
and a recurring theme in maths is that you can think of certain objects in many different ways, for instance if you want to picture the zeros/roots of some quadratic function you can think of that problem 1) symbolically/algebraically, by deducing some formula that the roots should verify, 2) geometrically, by knowing that the roots are the points where the graph touches the x-axis, etc.

I will work my way up to pre-calculus levels of mathematics so a lot of geometry and linear algebra. Much of my self-study is going be done through the Everything you need to know textbook -- I'll get a supplementary solved workbook to expose myself to even more questions and problems.

i'm a software engineer and i probably get to do more math than most (a teeny tiny bit of financial math, relational algebra for databases, and graph theory 1 or 2 times) and i feel like it's not enough 
no prob and wish you the best, that sounds like a good plan if you're not 100% comfortable with HS maths yet
Khan Academy is a good resource in my experience, and the book is probably a good summary of the necessary stuff

Since I discovered the internet, the ocean of the knowledge it presented was so vast — just by tipping my toes into it I was considered smart and knowledgeable, would always have something to quip about history, physics, science or whatever other factors (credit to Vsauce, Vertasium, Vsauce2!!, numberphile and so so many more) my father also gifted me encyclopedias and they were always a great way to spend my leasiure time
As time goes — my attention got divided into my job and I find myself spending time still watching these videos which are a source of fascination, but now I want to go deeper into a subject — I just watched a video about the Punic war, and I really want to learning it in a deeper way; this happens a lot, with cosmological horrors or obscure math concepts and everything in between; I just don’t know how I should manage my time and go about learning a topic in a “deeper” more meaningful way than having just watched a YouTube video. I want to evolve my learning process as a child, to a deeper and something more significant — if that makes sense
