there's just not a lot of depth. proscuitto is cured in a way which highlights the taste of the pork itself while salami masks the taste of the lean in the much simpler and more decadent umami of the fats. this covers up some of the complexity that's developed in the fermentation process too

the reason proscuitto and jamon iberico are so good is that the fats and oils arent really getting in the way of you enjoying the way curing/fermentation interacts with the lean
