When I try to cast [[Dragon's fire]], a menu appears for selecting additional costs, but when I hit OK, it automatically uses the power of the one dragon I have on the field (3 from Khorvath), but I want to choose the dragon in my hand (Drakuseth) instead because it has a higher value for power (7). Am I doing something wrong?

As an additional cost to cast this spell, you may reveal a Dragon card from your hand or choose a Dragon you control.
Dragon's Fire deals 3 damage to target creature or planeswalker. If you revealed a Dragon card or chose a Dragon as you cast this spell, Dragon's Fire deals damage equal to the power of that card or creature instead.
3 is also the default amount of damage so maybe it has nothing to do with there being one dragon on the field?
I have enough mana to just cast Drakuseth and then try dragon's fire if that would be helpful for debugging?
alright nevermind, it just doesn't get around to prompting me to pick the dragon I'm choosing until after I've clicked through that prompt and the mana tapping, which is really weird and feels out of order but I guess it makes sense because it's an additional cost..? so it would happen after paying the mana cost?
You always target first, and in Forge we have you pay mana before additional costs

@leaden wren you got your answer, but just to add, if you want more info about casting spells, in the Comprehensive Rules, rule 601.2 and its subrules specify exactly what order you do everything when you cast a spell. It's up to you if you want to go that deep, though, since it can be confusing to learners and you almost never have to go through every step, nor does the order always necessarily matter in casual games (it can, though). You might even just search for it, as there are some nice flowcharts out there to help visualize things; just make sure they're not outdated.
