Im doing a dopple hunt run and after defeating the panda dopple it didnt complete the quest. It wont let me fight the dopple again at this time but the quest still needs to be completed.

Did you fight the panda dopple recently? Dopples need to rest for a few hours before you can fight them again, regardless of if you get the quest or not.

Thats not the problem. The problem is the quest didnt complete after beating the dopple. That never happened before

Ah sorry, i read it wrong. Maybe you did complete it, but got the quest again after fighting one of the next dopples.

I started the dopple hunt yesterday and completed it the same day (except panda which didnt complete after beating it)
