i feel like the more i touch my model the more I'm messing it up, i just wanted to fix a bit of deform on the eyes and the face a bit and reflect it to the other side but i feel like i messed up something important. Any help would be lovely iv been at this part for a week and i even turned my eye into a coin ...

it could be an effect of the deformer going outside of parent
can you take a video of how you make the reflect?

can you tell me the rectangle that i can see in both videos that is around eyes-nose level
what is that deformer? and why is parent of all the others?

well the problem is i dont know what kind of video you saw LOL
but the isue is that when a deformer that is inside another, goes outside of it... funny things happends.... some of your issues can be because of that
now about the face breaking when reflecting, there is something in your deformers, im not sure what, maybe they are not symetrical? as the reflection is not been symetrical
something i can suggest you is to create a rotator deformer on the neck, on the middle, with all the head pieces inside
and when you select reflect motion, go to the bottom and selec use guide and select the rotator deformer

i feel like i squished one of my eyes from reflecting the left eye

mmm im not sure why or what you moved whit the deformed you said.
also angle Z should be on a rotator deformer alone, so that should have nothing to do with anything inside on the ones you are rigging right now that are angle X and Y
