Your lips are OK, you can separate the both ways, some people like more separated some like together. There is no need to worry too much about that

would that also apply to the mesh as well? should i mesh it smaller or is my meh fine for how it might be rigged?

your mesh has not enough points in the lipline and too many points on the skin

the standard meshing for lips is three rows of vertices on the lip (like in the tutorial you're watching) and one row of vertices around the skin
