Alviss of the Nordic Alfar has an effect that goes:

"If an "Aesir" monster(s) in your possession is sent to your GY by your opponent's card: You can banish this card from your GY; Special Summon 1 "Aesir" monster from your Extra Deck, with a different name from the cards in your GY."

Can this activate if your Aesir is used as a kaiju tribute, a fusion material, or some other extra deck summon?

Yes it can

It doesn't specify how it would get sent, meaning as long as an opponents card (i.e Nibiru, Kaiju, Sphere Mode etc...) is what has it sent to grave, it would go off

I assume it wouldn't work with evenly matched, if that is correct, is there any other card that doesn't let it activate?

wait that banishes face-down and also it requires being sent to the gy...

if evenly matched forced you to send the cards to the gy, would alviss be able to activate?

cards that dont send it to the graveyard wouldnt let it activate

if evenly sent it to graveyard for some reason (which wouldnt be legal afaik), then yes itd go off
