Title pretty much covers the question.
I want to use my H-shifter on Mazda but I do not see a way to do it, since it's sequential in the sim.
Am I missing something or are we locked into only using shifters that the car has?

well, u can use seq/paddles in all cars, but cant use h shifter in non h shiftewr cars

you can bind 3 and 4 to gear up / gear down, if your shifter doesn't have an alternate sequential mode, but i don't see why you would use that over the paddles on your rim
