Prochain and dernier always take the current state of things as reference, whereas precedent and suivant can also be used for references outside the present
Je l'ai vu il y a 5 jours. Le jour suivant, il était déjà parti.

So in the first example, you're taking the point of view of five days ago, wherease in the second example, you're taking the point of view of three weeks away from the present
And therefore you use précédent/suivant instead of dernier/prochain ?
Yeah, dernier/prochain always imply "from now", I'd say
