The difference between the two is fairly similar to the one between "going to" and "will" in English. Really generally speaking, futur proche is a bit more common orally, future simple can be a bit more formal, but is still pretty neutral. If you use one instead of the other, it's not a huge deal, just keep speaking and interacting with the language and you'll develop a feel for it.
