When you have a noun instead of an adjective (professions can become adjectives), you always use « ce ».
« C'est une professeure. »
« Elle est professeure. »

"je suis honoré de l'avoir joué"
« jouer » in this context would be indirect since the point is specifically about playing a game against him. In that case, I would either put « jouer contre qqn » or « affronter qqn ».

"Comment sentez-vous du prochain tournoi?"
« sentir » here means 'to feel' in the sense of touching, smelling, or perceiving something through the senses whereas « se sentir » is about emotions (like in the line below with « je me sens optimiste). Maybe « penser de qqch » since this asks for a opinion.
