it's part of the "ou bien" construction which is just "ou" but with an added way of saying either one is fine and it's up to your preference

Last q... what if there are more than 2 choices? Is it nonsensical to add bien to all the other options? "un taxi ou bien un bus ou bien un avion ou bien un traversier"

you'd usually only use "et" and "ou" between the last and second to last items (same for "ou bien")
"je voudrais une baguette, un pain au chocolat et un mille-feuilles, s'il vous plaît"
"vous pouvez payer en liquide, en carte, ou bien en chèque"
