The video was probably referring to the letter E, like the name of the letter. You're right in noticing it can be pronounced 3ish different ways, depending on where it is in a word.
It's like the letter A in English - the name of the letter "ay" is pronounce in "hate", but then "hat" and "father" have different sounds, which you can roughly deduce from how they're spelled. French E works the same way
