Assimilation between two vowels does happen but it mostly happens to function words like definine articles (le, la) pronouns (je, me, te, etc), prepositions/conjunctions (parce que, jusque, de), and so on. Moreover, the assimilation happens only with final E.
With other function words not ending in E, what occurs wouldn't assimilation, but change of form. This is covered in this article on euphonic adjectives.
