Your use of ce que and ce qui is good

Only the second sentence of ce dont is not right i believe

You'd say plutôt "c'est plus facile qu'on ne le pensait" ou "c'est pas aussi difficile qu'on disait"

And not ce dont because i think "dire de" n'est pas le bon tour à utiliser ici

The second « ce dont » doesn't work because there's an indirect object for the preposition: « what the others have said about [the homework] ». In addition, the preposition isn't really a part of the verb, you don't say « dire de qqch », you say « dire », « de qqch » is just a complement and can be tossed away without changing the meaning. You can't do that with the first example, « ce dont je te parlais », because in « parler de qqch » the preposition is a part of the verb and cannot be omitted without changing it.
So, I would say: « … ce que les autres en ont dit. »
