basically:

• ne + pas : formal
• pas only : casual
• ne only : literary and only for specific uses

When using ne + pas, you have to put ne before the verb and pas after the verb, except when using an infinitive. In this case, both ne and pas go before the verb.
"n'essaie pas de faire ça" (ne + conjugated essaie + pas)
"essaie de ne pas faire ça" (ne pas + infinitive faire)
