The first one sounds much better (était bébé). It’s also strange to say “une bébé” in the feminine.

Grammatically they all work the same way as talking about occupations does.

“Il” means “it” or “he” when referring directly to a previously mentioned noun or person.

“Ce” means “it” when it refers to a general situation or the totality of what you’re seeing or talking about, and not a previously mentioned noun or person.

As for “a été” vs “était”, that’s the usual difference between the passé composé and the imparfait.
