Basically when you have negation like this, the definite article is dropped but the uncountable/countable nature of the noun – in the form of the plurality – remains

J'ai du lait -> Je n'ai pas de lait.
J'ai de la limonade -> Je n'ai pas de limonade.
J'ai de l'eau -> Je n'ai pas d'eau.
J'ai des pommes -> Je n'ai pas de pommes.

« lait, limonade, eau » are all uncountable nouns so their structure is « de + [singular definite article] + [singular noun] » like « du lait » is « de + [le] + [lait] »

whereas « pomme » is a countable noun so its structure is « de + [plural definite article] + [plural noun] » like « des pommes » is « de + [les] + [pommes] »
