Cheval is always masculine, regardless of the sex of the horse
You can say 'jument' which means mare or 'cheval femelle' if you just want to specify that it's a female horse
Depending on the noun you choose, you'll need to change the pronouns you use for the reste of the sentences ('il' if you use 'cheval' and 'elle' if you use 'jument')
