It doesn't really mean 'entre'... it's kinda hard to translate into English

the word chez literally comes from the latin "casa" meaning house

so it's original meaning was something like 'in the house of'

here "chez les musulmans" is more like "for muslims" in meaning

parmi or entre gives more a feeling of picking between muslims, whereas chez is more about how things work for muslims
