Pardon and désolé ( or désoler ) are the same thing
Désoler is just a verb
There's no real difference in the sense of the sentences "Pardon." and "Désolé." But since pardon is a noun, and désolé a participe passé (a form of the verb désoler) you can use them in different contexts, besides a single word sentence.
For example, you can say "Je suis désolé", which means that you are sorry, and you can say "Je te demande pardon"/"J'implore ton pardon" = I'm begging for your pardon
Pardon is more of an "oops my bad", you're more likely to hear it if someone accidentally bumps into you.
Désolé is more of a "sorry", generally more serious
