They are completely interchangeable.

However, some forms are not used much at all, namely those of the -oi variant where the oi is not the last syllable in the word, such as in assoyons, assoyais or assois-toi

Apart from that, both variants are in regular in all regions afaik.

Some variants are more common in certain tenses and with certain subjects, and that can vary by region (-oi are more common in Quebec than in France)
