to add to this, if we took another 2 new unique and 1 repeating profession, we go all the way to 49% tax as per my calculations

Can you try to say what is unclear under 'Who must found a company?' and 'Why do companies exist?' from the documentation? I think it's well written in there.
The income scaling depends on your playstyle - it's easier for you if you don't choose different skills but not needed. Feel free to give more details please.
