you go back to boot on BIOS mode, then you remove the efi stuff, replace it by a /boot, then you keep going for the few steps to fix.

My recommendation before starting it is:
1/ Define which partition would receive root for Gentoo
2/ Define if you are going UEFI, or BIOS, but it seems that the BIOS path nonetheless. Plus you used the BIOS MBR disk schemes so it's "better" to do it the «old» ways.
3/ What kind of profile you want (so far, amd64, desktop/openrc with plasma profile ?)
4/ Will you use the GRUB of mint, or Gentoo, both are perfectly valid, btw. I would suggest to keep Mint's grub at first, then switch on Gentoo once you think the installation is done, your settings are working and happy with it.
5/ Will you go -bin kernel or not, I heavily suggest to pickup the -bin, less compilation time, if you don't needs anything to manage into the kernel, the -bin is more than fine.
6/ And I forget some stuff.
