Hey I was so stoked about the dual wielding fo meele weapons when I tested this in the alpha test.
Now I was experimenting a bit but after testing different combinations all of them do not feel like the approach really works great.

E.g. when you equip a dagger and a longsword you can of course try to weave the quicker dagger hits into some longsword action but if I would use a shield and simply use the technique of the longsword I would make the same damage if not more and would be much better protected. There is no real added value here except when you get to the stage of comibining maybe different enchantments and poising or so. But this might rather be added value in the late stages of the game and until then it just does not feel rewarding.

From my experience in martial Arts dual wielding should fit into a niche between wielding a longsword e.g. in 2h and a sword and shield.
Less defense than having a shield but also more damage and counter attacks or riposte, in generall more technicall variety.
While wielding a longsword with 2h for example comes with even higher dmg per hit but at the expense of limiting defensive capabilties further.

Maybe for some inspiration here is a video that showcases how the combination of a longsword and shortsword work in Japanese Matrial arts. But this is also translatable toward Rapier and dagger etc. in HEMA.

The problem with dual wielding is that enemies are so aggressive that the bonus damage of the off-hand weapon is still a net negative for how much enemies hit you. It’s cool as hell, and I imagine chaining combos could theoretically be fantastic, but ai behavior does not lend to very finessed combat.

Needs a parry system and heavy tuning of stagger to make it worthwhile imo.

I thought id add that there are some perks you can add as items rn but as far as I can tell they are not functional. But one describes being able to block and attack at the same time by pressing both buttons. I feel like that will probably be changed. but, if it does work, it fits the kinda agro I think you probably want out of dual wielding.

You can block and attack with a shield, which makes sense, but right now the combat goes in such a way with an extra weapon (or just without a shield) that you can’t overcome the loss of hard defense by using skill and finesse.
