I've been trying to build a floating island but after I had finished it, the ship helm didn't register the blocks and only counted itself. Am I missing something here? Is there a size limit on builds?

there are certain blocks that are excluded (stone... etc) try using double slabs

Most slabs should be included so if you're having trouble with world edit you can swap all the normal blocks for doubled up slabs (though you'll need a mod if dirt and grass are also excluded)
