for now I've watched the 2 videos of 3Blue1Brown about the subject, but they were kind of too theorical and I doubt I'd be able to code something as like just from those, so I'd appriciate some tips to where to go to learn

You don't need to code AI yourself
Unity has a package for that

Then you should probably, ya know, ask in a machine learning or a general programming server, instead of a server focused primarily on Unity tutorials
