when i connect with sftp and i try to load a backup (deleting all the files first) the server shuts down and generates automaticly new folders. How can i load the backup without them generating directly?

Load an actual back up from the minehuts panel

Or, stop your server, delete the files you want to replace specifically, and drag in the new ones
