I don't believe that's how unicode symbols work. Search your desired unicode into Google and copy it under UTF-8.

And if that wasn't the issue, check your resource pack folder and check if it's there. If not and uploading the texture pack from the Minehut texture pack uploaded doesn't work, try uploading it by pasting your texture pack into a texture pack to link website and editing your server.properties.

I have created a custom unicode character that means it isnt edited to smthing else or retextured
