You could just use this, I'd also recommend saving the entity to something like {_entity}

Ah, you cannot use {_entity} in another event. You could use {entity} instead.

Did you test it?

You cant damage it for 10 seconds due to having a resistance of 5 but afterwards it should go down.

If you want to damage it straight away, set resistance to 4

try making it so every time you hit the mob you change the name of the mob to the health after you hit it so it updates, is that the problem
