Dire Emblem or Assassin's Creed is cool.
Animal Crossing or Tetris effect are good
You can go at your own pace
Both feel real pick up and play
Stardew
Tetris and untitled goose game.
If you like find 'em ups, Hidden Folks is pretty nice
Florence (nice short game)
Sky Children of Light
A Good Snowman is Hard to Build
PikuNiku
Thomas Was Alone (very pickup and play)
Donut County (a good time)
A Short Hike
Let's Play! Oink Games or Clubhouse Games (if you like board games)
The problem with the eShop is you really gotta know what you're looking for. If you're not really a big game person and don't have much interest in going deeper, I would avoid mainstream titles and most first party options
The main pages of the eShop mainly push those titles
Indie Games are going to be more willing to experiment and have shorter experiences and cheaper prices

that have indie game segments and pretty thorough reviews for things they may interest you

Also bejeweled is a match 3 game and there are a few of those on the eShop with varying degrees of quality

My favorite game is pretty tough to pick
I mean BOTW is huge and one I can always go back to
But I've been loving A Link to the Past on NSO
Children of Morta is really fun but they need to add online to the switch version already
Death's Door was quite hard but fun to beat
I'm a BIG ARPG guy
If it has sword combat and a dodge move, I probably want to play it
