I was raised on PC games, I love MMORPGs and I just got an OLED switch as a gift. I'm looking for a game for many hours, online or with a ranking where the longer you play the better you become.

Honestly I don't really know any mmorpgs on the switch. Palia is a new one which could be interesting.
RPGS are many. Skyrim, Witcher 3, Kingdoms of Amalur, Xenoblade series (JRPG), Monster Hunter may be interesting

Most of the online games with ranking systems are free-to-play type titles.
The Diablo games are the closest games I can think of, but that isn't really an MMORPG.

If you've got a Japanese account and some patience then you can play Dragon Quest X pretty easy, Warframe is another MMORPG available on the platform. If you want somethin that isn't an MMORPG but can tickle the same itch, there's also Monster Hunter Rise and the older but more content packed Monster Hunter Generations Ultimate
