I second Mario Kart... if its your cup of tea, it can be super fun
Using two Switches, Dying Light, 20xx/30xx, South Park Snow Day, and Divinity 2.
Together on one Switch, Nine Parchments, Full Metal Furies, Super Mario 3D World, Team Sonic Racing and Unrailed.
And I was looking through the other responses posted here and a lot of those aren’t co-op games so definitely do at least a little research before purchasing.
It Takes Two is considered the definitive co-op experience by some people and got game of the year.
Re 5 and Re: Revelation 2 (not sure about Rev 2) both have co-op but can be played single player.
Mario Kart is litteraly a coop game nothing to say about it.
Portal 2 has a coop campaign but the main game is single player.
The only game I'm not sure about is Ultimate chicken horse so in what world is that "a lot of those aren't co-op games"
Only You said RE5 and Revelations; there’s a difference between the entire series and those specifically.
Mario Kart everything is unlocked already so there’s not much point to co-op mode on the Switch version.
One person mentioned "Resident evil" but didn't specify which games so don't put that on me, the only resident evil games known to include co-op are 5 and Rev 2

Resident evil was mentioned indeed and since they didn't specify which game I'm just guessing those 2 because the other Re games don't have co-op options

No the RE series can’t be; that’s why I said to do research. You’re over complicating it
No one said the entire series, OP wants coop games specifically so I don't see a problem with them playing only 5 and Rev 2

Almost all of the Kirby installments for Switch are single-console co-op up to 4 players. (Forgotten Land is 2P.)

For other two-player experiences, I'd say... Portal 2 in its co-op scenario.
