I was thinking of buying a TV to play switch docked but wanted to know if the response time is good for online games like mario kart, splatoon 3, smash etc or any game in general.
One of the models I've considered has a response time of 10 ms. Will that affect the gameplay in a bad way or is it good?

The gameplay wont be affected by the response time, it will be affected by input lag.
Response time is just the specification on how fast the pixels can change from one color to the next, or from grey to grey,
Higher response time might cause blurring on motion, lower response time will make motion clearer.
afaik in gaming lower is better but its diminishing returns, For monitors 10ms is pretty slow but for tv’s it’s pretty much the best you could get before going into OLED tv’s
Though take their specifications with a grain of salt, published response times are notoriously untested or faked
