try dragon's dogma
Bayonetta has some light rpg elements (limited skill tree, consumables etc) but it's really more action game (like other platinum games titles in that sense if you've played any)
As for rpgs ...there's always skyrim, witcher 3 port is nice too (although you may not view this as a traditional rpg because you have to play the witcher/ can't make your own character) and includes cross save if you want to play on switch and steam
Assassin's creed rebel collection often goes on sale for 20 dollars and you get black flag which people consider to be one of the better Assassin's creed titles
And i second dragon's dogma. It's still popular and a sequel is in development because of how popular it was
Ah also forgot to mention dark souls
It's a good port for switch and really holds up well, even going back to it after elden ring
Undertale and then Deltarune in that specific order

Also the game says at the start you're supposed to play Undertale first, probably because it will be important in later chapters
I uninstalled elden ring a few days back cause I got gapped by the enemies
I reinstalled it last night LOL
been heaing undertale, Ill give it a shot
Dont forget to upgrade the weapon you want to use! It makes a big difference
