The biggest different between the normal version and the OLED is the screen on the console, so it doesn't affect streaming at all.

Now the other difference you need to be aware of is the dock.

The normal version doesn't have LAN port on the dock, while the OLED has one.

This doesn't affect streaming at all, it only affects how you want to setup the internet connection to the Switch.

Since the streaming is probably handled by your PC with a capture card or by an independent capture card, the LAN port on the dock doesn't help this at all.
